Nutella Cookies

From Culinary Concoctions by Peabody

1/2 C unsalted butter, at room temperature
1/2 C sugar
1/2 C firmly packed brown sugar
1/2 C Nutella or other hazelnut chocolate spread
1 egg
1/2 tsp. vanilla
1 1/2 C flour
1 tsp. baking soda
1/4 tsp. salt
1/3 C mini chocolate chips

Preheat oven to 350 degrees.
Cream butter with mixer about 1 min until smooth. Add in both sugars. Beat on high speed about 2 min until light and fluffy, scraping down sides of bowl as needed.
With mixer on low add egg and vanilla. Then add Nutella and mix well.
In small bowl whick flour, baking soda, and salt. Add dry ingredients to wet ones and mix on low speed until mixed well. Increase speed to medium and mix until dough is smooth. Fold in chocolate chips.
Use teaspoon to form dough into balls and place on greased cookie sheet. To prevent cookies from spreading to much stick cookie sheet in freezer for about 10 min before baking.
Bake 6 to 7 min. Let cookies cool about 5 min and transfer to cooling rack.

Banana Tres Leches Dessert

From Betty Crocker

Takes 3 hours and 55 min.

1 boxy Betyy Crocker SuperMoist white cake mis
1 1/4 C water
2 Tbsp. vegetable oil
3 eggs
1 C mashed bananas
1 can (14oz) sweet condensed milk (not evaporated)
1/2 C (from 14oz can) coconut milk (not cream of coconut)
1/2 C whipping cream
1 container Betty Crocker Whipped fluffy white frosting
Banana slices and/or toasted coconut, if desired

Heat oven to 350 degrees. Greas bottom only of 13 by 9 inch pan with cooking spray.
In large bowl, beat cake mix, water, oil, eggs and mashed bananas with electric mixer on low speed 30 seconds; beat on medium speed 2 min. scraping bowl occasionally. Pour into pan.
Bake 30 to 35 min or until toothpick comes out clean. Cool completely, about 1 hour.
Poke top of cake every 1/2 inch with long tined fork, wiping fork occasionally to reduce sticking. In large bowl, stir together condensed milk, coconut milk, and whipping cream. Carefully pour evenly over top of cake. Cover; refrigerate at least 2 hours or overnight until mixture is absorbed into cake.
Spread frosting over cake. Garnish each serving with banana slices and/or toasted coconut, if desired.
Store covered in refrigerator.

Cheese Lover's Pasta Roll Ups

From Kraft Foods with suggestions from me

1 hour 15 min

What you need

1 egg beaten
1 container (15oz) ricotta cheese
2 C shredded Italian Three Cheese Blend
4 green onions, chopped (I didnt use)
1 Tbsp. Italian seasoning
1 jar (26 oz) spaghetti sauce, divided
16 lasagna noodles, cooked
1/2 C grated Parmesan Cheese

Make it

Heat oven to 375 degrees
Mix first 5 ingredients until well blended
Spread 1/2 C spaghetti sauce onto bottom of a 13 by 9 inch baking dish (I use glass). Spread each noodle with 3 Tbsp. cheese mixture; roll up. Place seam sides down, in dish. Top with remaining sauce and Parmesan; cover with tinfoil.
Bake 40 to 50 minutes or until heated through, uncovering the last 10 min.

Cream of Potato and Green Onion Soup

I got this recipe from cooks.com and made it my own.

6 C. peeled shredded potatoes (or you can use shredded hash browns this will cut down cooking time)
2 C. water
1 Can cream of celery with 1/2 C water (I use cream of chicken)
1/2 C finely chopped onion (I use green onions about 1/4 a Cup)
2 tsp. dried parsley flakes
2 chicken bouillon cubes (I use 3)
1 tsp. salt (I used 2 tsp.)
Shredded carrots amound desired (I use 1/2 a cup)
3/4 lb. cubed cheddar cheese (I use 1 C shredded cheese)
3 Cups milk divided (I dont use milk because then it becomes more thick I use 1 more C water)
1/4 C flour (I dont use this becuase I dont want it thicker)

Combine all ingredients except for bottome two in a large pot (make sure its a big one because it gets really full). Bring to a boil. Cover and reduce heat, simmer for about 20 min to 30 min or until potatoes are no longer crunchy. Then add the milk and flour and stir in if you want to do that part. Cook until thick. It will be pretty thick already. (Instead of using 3 bouillon cubes use only 2 then a can of chicken broth) This should help it be not so thick.

Coconut Pound Cake

When we went to Hawaii we had coconut pound cake and it was amazing so I found a recipe to try. It is pretty good.
I found this recipe from allrecipes.com and made it my own.

2 cups sugar
1 cup butter
5 eggs
2 cups flour
1 1/2 tsp. baking powder
1/2 cup milk
1/2 cup coconut
1 1/2 tsp. coconut extract

Preheat oven to 350 degrees. Grease a 9 by 13 inch pan.
In a large bowl, cream together sugar and the butter. Fold in the eggs one at a time, fully incorporating each one before adding another.
In a seperate bowl, mix te flour, baking powder, milk, 1/3 cup flaked coconut, and coconu extract. Beat in the creamed mixture. (This step is important or the cake will fall)
Bake 35 minutes or until toothpick comes out clean.

Chewy Granola Bars

I got this recipe from allrecipes.com and made it my own.

4 1/2 cups rolled oats
1 cup flour
1 tsp. baking soda
1 tsp. vanilla
2/3 cups butter, softened
1/2 cup honey
1/3 cup packed brown sugar
2 cups miniature chocolate chips
I added.
1/3 cup coconut
1 cup marshmallows
1/2 cup white chocolate chips

Preheat oven to 325 degrees. Lightly greaseone 9 by 13 inch pan.
In a large mixig bowl combine the oats, flour baking soda, vanilla, margarne, honey and brown sugar. Stir in the 2 cups assorted chocolte chips, marshmallows and white chocolge chips.
Lightly press mixture into the prepared pan. Bake at 325 degrees for 20 minutes or until golden brown. Let cool or 10 minutes then cut into bars.Let barscool completely in pan before removing or serving.
